The sap is collected in both locations and then boiled in an Indiana-made stainless steel evaporator that sits right in Worthington Hills in the City of Columbus. But that is not the end of the story; some of the finishing and mason jar canning occurs in the City of Indianapolis. Most recently, the retail packaging is performed in Ohio. So, the answer quite simply, is both. We have a range of mostly sugar maples in Ohio while our taps in Indiana are currently all from the closely related Black Maple from an area of a lowland river bottom located in Ravenswood, a prominent bend in the White River.

No! Quite simply, it is sweetness by subtraction. At this stage, we are a very small operation with a backyard evaporator just a short wedge from the 12th green at the Worthington Hills Country Club. We don't use any defoamers or other products to augment flavor, stability, etc. We just take the sap and boil and boil and boil it down.
