You may have wondered about the name "It Goes On" as you've perused the site and surely, one thing about maple syrup is that it mostly "goes on" things and makes them sweeter and tastier.  However, the phrase which is frequently used in many contexts, has particular relevance in the year of my venture's formation: 2020.  The poet Robert Frost was interviewed in 1954 by Ray Josephs who asked: “In all your years and all your travels, what do you think is the most important thing you’ve learned about life?”  With all Frost's mastery of words and keen observations of human nature and nature itself, this was his response:

"In three words I can sum up everything I've learned about life: it goes on."

It is in that spirit that I approach the waning months of the Midwest Winter and draw the sap from these majestic and stoic trees, sharing their essential sweetness.   It is not only a stark reminder of the rotation of the seasons and the relative constancy of life, but also a reminder that tactile efforts to harvest, collect, steward and process the simplest element can yield beauty and sustenance.  The season arrives abruptly with fickle days and nights having to meet just the right requirements for good sap flow, but in that phrenetic few weeks, it also reinforces the value of slowing the pace of life to a very deliberate one.  We hope to continue growing as we approach 50 taps this year.   As we do, we'll share more of our story with you.
